Morel terrine in a 200g jar, produced in their workshop in Peyruis. The morel mushroom In spring, from April to June, a conical, elongated brown cap indicates the morel under the leaves. Often found in old fire sites, it grows in small clusters. The morel has a nutty flavour with rich woody aromas. Its bouquet and rarity make it one of the most sought-after mushrooms by gourmets. Our tasting recommendations Even if the morel terrine remains decidedly earthy, it will gladly be accompanied by a glass of white Burgundy, a Meursault for example. Its flavour will be best expressed if it is taken out of the fridge at least an hour before.A recipe idea? Open small country bread rolls, replace part of the crumb with two tablespoons of morel terrine, sprinkle with grated Comté, a little parsley and bake in the oven at thermostat 6 (180 °C) for 10 minutes. Serve on a bed of mesclun, accompanied by balsamic vinegar cream.
